Whole meal Bread Rolls

Today’s baking bread adventure was fun. While the plan was to make usual bread rolls, I ended up making it with a very healthy twist.


I do get asked for eggless version for certain recipes that I share, specially when it comes to bread. There are plenty of ‘substitutes' for egg but completely not using eggs or it’s substitutes can yield a good result in bread making. Of course I say this based on a last experience making a loaf and today making these rolls.

Today’s bread rolls are made using 100% whole meal flour without any use of butter/oil or sugar. Whole meal flour is wheat flour with good amount of wheat bran. Usually it is said (and I believe), brown bread that are commercially available aren’t wholesome but it has added white flour to get the perfect white bread like texture. But the rolls I made did get very close to how it is available commercially and are very healthy with no preservatives.

Ingredients:

400gm whole meal flour

240gm bottled water

8gm instant yeast

6gm salt

15gm milk powder (optional)

25gm honey

One tablespoons flour for dusting


Method:

1 - Mix flour with salt.

2 - Mix rest of the remaining ingredients (except flour for dusting)

3 - Add flour salt mix to the liquid and combine until you get a shaggy mass.

4 - lightly dust working surface and knead the dough for 10-12mins or until soft.

5 - Dust a bowl, place the dough in it to double in size (60mins)

6 - Punch out the air, lightly knead. Divide the dough into 12 equal parts.

7 - Shape each dough into a smooth even round balls.

8 - Place each ball on a baking tray that's lined with parchment paper.

9 - cover with a tea towel and let the dough rise or double in size.

10 - Preheat gas oven and place a water container at the rear end of the oven to create steam.

11 - Dust the dough balls with flour, bake the rolls at 200C for 35-40mins or until the top color has browned. You may consider to reduce baking time depending on your oven make or type.

12 - Once done, remove the rolls from the oven and let it cool down completely on a cooling rack before enjoying with your favourite condiments.
