Vellarikka pachadi
Kerala cuisine for me has been a favorite mainly because of fresh ingredients used. Some dishes are so easy to prepare and needs no flame(if no tempering). Today is one such recipe that is always a SOS dish - Vellarikka Pachadi which is Cucumber Pachadi
This easy refreshing dish is usually a part of the Kerala sadya. A cooling and healthy mix of cucumber, coconut and curds. It is a raita with the aroma of mustard seeds both ground and in the tadka. A soothing taste that stays on the palate long after you have eaten it. You can have it just as it is with rice, or pair with a simple palakkad sambar (Click here for recipe)

Ingredients:
2 cucumber, peeled and grated (squeeze out all the water)
salt as per taste
2tbs yoghurt
For grinding:
3tbs freshly grated cooconut
2 green chilies
1 tsp mustard seeds
1 tsp cumin seeds
Grind all above to a smooth paste
For tempering
1-2 tsp coconut oil
1tsp mustard seeds
2 dry red chilies
Method:
1 - Add the ground paste (as per the list under grinding) to the cucumber with salt and give a good mix
2 - heat oil and add the mustard seeds, let it crackle. next flame off, add dry red chiles and mix.
3 - Pour over the pachadi and mix.
4 - Add 2tbs yoghurt, salt and mix. Chill it before serving
