Thai Spicy fried rice

Thai cuisine is a blend of the freshest ingredients and flavors. Every taste note on the palate is addressed and eating Thai is like a party in the mouth! A lot of the dishes are very aromatic due to the use of lemon grass, fresh turmeric, bird's eye chillies, kaffir lime leaves, galangal and fish sauce. These signature ingredients with coconut milk result in a fantastic array of soups and curries that are popular around the world!


Today I am sharing a recipe that I had at a friends place and it is super simple and delicious. The below portion is good for 2 people


Thai Chicken Fried Rice

Ingredients for spicy sauce

3 garlic cloves

4 thai red chillies

3/4 tbsp fish sauce

salt a pinch

* Pound all the above to a coarse paste


Other Ingredients

2 cups cooked jasmine rice (old)

200gm thin sliced chicken breast

one tablespoon fish sauce

1/2tsp of black pepper powder

2 tbsp cooking oil

1 small onion, sliced

1 1/2 cup sweet basil

02 eggs (one for each person)

cucumber slices and lime wedges to garnish


Sauce for the rice

1tbs soy sauce

¼ cup oyster sauce

1 tsp sugar

*Mix all the above for sauce


Method:

1 - Marinate the chicken pieces in one tablespoon fish sauce, a pinch of baking powder and 1/2 tsp pepper powder and set aside for 10mins

2 - add oil in a wok and as it heats up well, add one egg (break open in a bowl, don't whisk), splash some oil on top. One edges crisp, take it out on a kitchen towel

3 - In rest of the oil, add the ground spice mix and fry for a minute

4 - Add the sliced onion and saute for a minute

5 - add the chicken pieces and cook until its done

6 - add rice and mix well, add the sauce mix as above

7 - add sweet basil. turn off heat and mix

8 - top it with fried egg
