Shepherd's Pie
Shepherd’s Pie is a classic Irish mince pie, cooked with veggies and topped with creamy mashed potato.

The last time I made shepherd’s pie, I ended up with cottage pie since beef mince was used and that’s an English dish. Today l made with lamb mince, and with a long weekend ahead,brunch was Shepherd’s pie. Turned out absolutely fantastic and delightfully delicious:)

A very simple dish to make, in one pan and super easy . In today’s recipe, I have used goat cheese as my twist. You can totally skip this step. Also adding egg yolk to the mash is not a must. I do it because it adds an even more creamy texture. This dish is perfect when sharing with family or friends. And mind you, its quite filling!!

Here is a step by step recipe with pictures for easy understanding
Ingredients (4 persons)

400gm lamb mince
1 carrot 🥕 peeled, diced in small pieces
3TB frozen peas
1 medium onion chopped
3-4 garlic cloves grated
1TB chopped fresh rosemary (or 1/2TB dried)
1TB chopped fresh thyme (or 1/2TB dried)
1TB chopped fresh parsley (or 1/2TB dried)
2TB tomato paste
Sea salt as per taste
1TB Worcestershire sauce
1TB flour
2TB olive oil
40gm grated goat cheese (optional)
Topping ingredients
2 medium potatoes, peeled and steamed
2 egg yolks
2TB shredded Parmesan cheese
Salt as per taste
1/2 tsp garlic powder
10gm unsalted butter
Method
1 - In a heavy skillet, add olive oil. Immediately add chopped onions and let it turn soft.
2 - Tip in the mince, break it using back of a spatula.
3 - Add garlic, salt and fry until the mince and onions start to release water.
4 - Add carrot, peas and chopped herbs, mix. Cook for 2-3 mins.
5 - Now add tomato paste, Worcestershire sauce and mix. Cover and cook for 10min.
6 - Add flour and mix until you see all the water absorbed (2-3min). Turn off the heat.

Preparing mash potato
1 - If you don’t have a masher, using back of a fork, break all steamed potatoes to a fine texture.
2 - Add egg yolks and mix.
3 - Season with salt and garlic powder.
4 - Add butter and Parmesan cheese. Mix well until creamy.
Assembling (preheat gas oven to 200C)
1 - in a deep baking dish, add all the cooked mince in an even layer

2 - add goat cheese and layer it evenly (optional)

3 - spoon dollops of mash potato and spread it evenly, covering all covers. You may want to moisten back of spoon and spread the mash evenly
4 - using a fork, score the top lightly. Not very deep scoring

5 - garnish with some Parmesan cheese

6 - Bake in preheated oven for 35-40mins in middle rack or until the top starts to brown
*if using electric oven, reduce baking time*

Shepherd’s Pie is ready to be served.
