Ghee Rice or Neychor

Ghee rice that originates from the Malabar region of Kerala, is the closest one can get to a biryani kind of meal plate, according to me. On a busy day ghee rice is a treat for taste buds. Soft fluffy rice with pink onions. fried cashews and lots of aromatic ghee that makes this dish so delicious.

There are many variations to ghee rice and it changes from kitchen to kitchen, person to person. I like to add few extra whole spices and few whole coriander seeds.

Let me take you through the Ghee rice recipe, The good food guy way :)

Ingredients

one cup sella rice (washed and soaked for 2hours)

one cup hot water (same cup as rice)

one large onion sliced

3-4 cardamom pods

3-4 cloves

5-6 black pepper corns

3 bay leaf

3tbs broken cashews

3tbs raisins

one tsp whole coriander seeds (optional)

salt as per taste

2 tbs ghee

half tsp crushed saffron soaked on 2 tbs warm milk

Method:

1 - In a pressure cooker, add ghee. once heated, add sliced onions and fry for a minute

2 - next add the whole spices and fry until fragrant (couple of minutes)

3 - Now add the cashews and raisins and fry until the cashews change color slightly

4 - add coriander seeds, salt and mix

5 - Add rice and mix. Add hot water

6 - Close the lid of the pressure cooker, cook on high for 5mins and low for 5mins. Let the steam settle down

7 - open lid, drizzle the saffron milk and close the lid, let it sit for 5mins

8 - open the lid, fluff the rice and ready to serve

** rice will be little moist but once it is in contact with air, it will dry off
