Cranberry & White Chocolate chips coffee cake
Cranberry and white chocolate coffee cake is a perfect cake for the month of December.
Cranberry cake is a coffee cake and can be perfect anytime, just as tea cakes are with tea. Cranberries & White chocolate chip cake with a cheese cream frosting and generous drizzle of cranberry and chocolate chips makes me say - Hey! Tis the time to be jolly 🎶..And that’s how I felt when I was baking this cake.
The recipe was shared by a friend and with lot of initial reluctance to try, I gave it a shot. And boy! I discovered I can bake a celebration cake too ☺️
All the cooking & baking I do, is out of sheer passion and love for home made food. So I take time out to explore and tap into my passion. Although many fellow foodies have their eyebrows like a camel hump thinking - "he’s a Guy... then how come he cooks ?😉Must be his wife, girlfriend or someone at home cooks! " - Nope! I do it all. 2020 has not been bad to me. I could pick up so much about baking and basic photography that it is a sense of positivity that gets renewed each time I cook, bake, click and share. I share a positive experience along with the food. Cranberry cake is one such experience. It had being precise, being creative and chance to pile on calories all in one cake 😅. I have split the recipe into two parts. One is baking the bake and the second is the frosting. The topping part is optional. One can leave the frosting out if you don’t prefer it. But as a personal recommendation, try with frosting. It is just ❤️!
Ingredients for the cake
2 eggs at room temperature
70gm melted butter
65gm sour cream or butter milk
95gm white chocolate chip
130gm caster sugar
2tsp vanilla essence
130gm all purpose flour
1/4 tsp baking soda
1/2 tsp baking powder
1tsp ginger powder
a pinch of nutmeg
Cream cheese frosting
200gm cream cheese
1/2 tsp orange blossom
65gm powdered sugar
1tsp vanilla essence
- Whisk all the above ingredients and keep it ready
Topping as garnishing (optional)
30gm white chocolate chip
few cranberries to garnish
1 - Soak cranberries in water for 10-15mins.
2 - In a large bowl add eggs, sugar, vanilla essence and whisk until well combined.
3 - Add flour, baking soda, baking powder, ginger powder and whisk until well combined.
4 - Add butter and whisk until combined. Next add sour cream and whisk until well combined.
5 - Add drained cranberries and chocolate chips and fold in well.
6 - Pour the batter in a square baking tin that is well greased.
7 - Bake at 170-180C gas oven for 40-45min or until inserted tooth pick comes out clean. If using electric oven, consider reducing baking time or until the cake is cooked through.
8 - Cool down the cake completely.
1 - Spread the cream cheese frosting mix on the cake
2 - Garnish with cranberries
3 - Sprinkle white chocolate over the cake.
4 - Let the cake chill in the fridge for couple of hours before serving.
