Chicken Curry in a Hurry

There are times when one is hungry and doesn’t want to spend lot of time in making something to eat. But it's got to be delicious. 'Jhatpat' and 'chatpata' the better :)

Today was such a day! After a free ride on life’s roller coaster, it was time to call it a day. And Good food is very crucial for

'it' to be called as a 'day'!

As l put my cooking apron on, this easy but quick recipe came to mind, that one can go back to again and again and again. And today’s 'curry in a hurry' was born.

With some chicken that was thawed, I didn’t want to make one of the Curries that I have already made earlier. So I came with a quick and easy way to spice up my food evening! I am sure you will love the end result. May be my plate or yours, It is bound to taste YUM ;)


Let me take you through the curry in a hurry recipe..

Ingredients ( for 2 people)

400gm mix chicken pieces

2 medium potato halved

Half bunch chopped cilantro (reserve a Tb)

4 tablespoons oil

Salt as per taste

Half tablespoons garam masala powder

Masala base ingredients

One medium onion roughly chopped

Two small tomatoes roughly chopped

4-5 garlic cloves

One inch ginger piece

Half tablespoons Tikha Lal (red chili powder)

1 tsp turmeric powder

1 tablespoons whole coriander seeds

Method

1 - Make a smooth paste with all the masala base ingredients by adding very little water.

2 - Heat oil in a pressure cooker. Once hot, add the ground masala, salt as per taste and fry for good 10mins or until the oil separates and the base masala starts to thicken

3 - Add chopped cilantro and fry for another 2-3mins

4 - Add halved potatoes and fry for another 4-5mins

5 - Add chicken pieces that are washed. Fry for couple of minutes on high

6 - add garam masala, half cup hot water, mix, put on the lid and pressure cook on medium heat for one whistle (10-12mins)

7 - Once the steam settles down, open the lid, add the reserved cilantro and done.

Serve with spiced hot rice and some salad and a lemon.
