Chicken Adobo

Living in the Middle East it is next to impossible to not have come across the amazing people from Philippines. They are the humblest people to have around, fun loving and it is very evident in their nature and they make really good friends.

Today's dish is one of Philippines most loved and they swear by it. I ended up making friends over Adobo while I was living in the UAE. I am so fascinated by this simple yet delicious dish, so I always make at home, when bored of the regular dishes
Ingredients
8 chicken thighs, skin on bone in
one cup soya sauce (not light)
half cup apple cider vinegar
one TBS fish sauce (salt optional)
3-4 Bayleaf
Marinate the chicken with all the above ingredients for 15mins
Rest of the ingredients:
One onion thinly sliced
10-12 cloves of sliced garlic (i like it more)
one tablespoon sesame oil or any oil of your choice
2tbs sugar
Method
1 - Slice onions and garlic
2 - Add oil in a deep dish and fry onions and garlic until translucent
3 - Gather onions to one side and start arranging the chicken with skin side down
4 - Spread the garlic and onions on the chicken pieces, cover and cook for 5-7 minutes until the skin gets a nice brown color
5 - Flip the chicken over, add the marinade over the chicken and pour half cup hot water. The liquid to cover half way through the chicken or just top bit if chicken flesh seen (not completely immersed)
6 - Cover and cook for 15-17 minutes or until the sauce is reduced by 80%.add sugar and simmer for 2mins
DONE! Serve with Jasmine Rice
