Sugar free Banana Coconut Halwa

Since I have a very strong sweet tooth, I always want to have a small bite of dessert BUT keeping in mind the health factor, I usually settle down for a dark chocolate piece or some yoghurt with honey. Today i found another way to indulge into dessert but sugar free or you could say have healthy sugar


I have tried various form of natural sweeteners, from agave plant based sweetener to coconut sugar to jaggery powder. Kithul Palm Sugar syrup has been my favorite for its benefits. I use them in most of my desserts and there is negligible difference in taste


I had some overly ripe plantains and instead of letting it go waste, I made banana halwa. Coconut goes in to create a body and volume. Let me share the recipe which gets ready in less than 45 mins


Sugar Free Banana Coconut Halwa

Ingredients

03 ripe plantains (regular banana can be used but taste may vary)

03 tablespoons of Kithul syrup (alternatively jaggery or sugar)

one tsp of cardamom and cinnamon powder mix

half cup ghee or unsalted butter

2 tablespoons of raisins

3 tablespoons of desiccated coconut

dry nuts for garnishing


Method:

1 - Peel the bananas and using a fork mash them up. Add this to a heavy bottom wok

2 - Now add the ghee, mix and turn on medium heat and roast until the banana and ghee is combined, If you feel the banana is drying up then add little extra ghee. Total time taken here is 8-10minutes

3 - Now add the kithul syrup and raisins and give a good mix and let the mixture sizzle (about 5 minutes) By now the mixture will be all pulpy

4 - add the desiccated coconut and and mix again and cook for next 6-8 minutes on medium heat until all moisture is absorbed

5 - grease a deep dish and scoop out the halwa in it. using back of a spoon pat down the make a even surface.

6 - Using a greased knife cut the halwa in pieces and place the dish in the refrigerator and chill for 15-20mins. serve with dry nut garnishing
